eggplant omelet [tortang talong-meatless] {paleo}

Tortang talong (eggplant omelet) is usally made with sauteed ground pork. But I made this really quick version because I didn't have pork and I had my husband throw the eggplant on the grill while he grilled chicken sausages.   Mommy's Lunch: Eggplant Omelet,  quick tomato salad (EVOO, splash of vinegar, salt and pepper) pears Packed in an  EasyLunchBox Eggplant Omelet (Tortang Talong) -chinese eggplant (long and slender, not the fat ones) -1egg (more if using more than 1 eggplant) -salt & pepper (to taste) Grill or roast chinese eggplant (long and slender) until tender. Peel off the chard skin and mash the eggplant flat while keeping the stem. Beat the eggs, add salt and pepper. Heat coconut oil (or preferred frying oil). School Menu Inspiration

Sometimes I draw inspiration from the school menu. I know Miss C loves sloppy joes and when the school menu calls for sloppy joes that day, we will make sloppy joes for dinner so we can pack leftovers for lunch the next day. Miss C and I reviewed the menu and so she can pick when she would like to eat school lunch. There were only 4 for the month of September, and I'm sure she will change her mind and will ask for a packed lunch instead. And I'm totally fine with that. :)  School lunch menu: pepperoni pizza, california blend veg, and blue jello Miss C had leftover pizza and cinnamon from her dinner at Chili's. I added carrots, mushrooms (her choice of veggie) and cherry tomatoes packed in a 2-tier bento box. School lunch menu:  Smoky links, peas & carrots, sherbet Miss C loves scrambled eggs with salsa, with toast, greek yogurt, and watermelon.

Hummus Deviled Eggs

I was packing Miss C's lunch while eating a hardboiled egg for breakfast. After scooping her hummus into a dipping container, I smeared the remaining hummus from the knife onto my egg... ding!  * LIGHT BULB * What if I mashed up the egg yolks with hummus? So I unpacked the 2 eggs I had packed for my snack, sliced each one, scooped the egg yolks out. I mixed in about 2 tbsp of prepared red pepper hummus. and spooned it into the egg whites. Next time I will add a splash of olive oil to thin out the consistency and add some relish similar to this  Hummus Deviled Egg  from Sabra. Hummus is a great alternative to mayonnaise, and you can even leave out the egg yolks altogether if you wish. Hummus Deviled Eggs

Bunny {blog} Hop

Miss C is on Spring break this week. The plan was to do a bunny lunch last week on Thursday and an Easter lunch on Friday. Unfortunately, Miss C was feverish on Friday and had to stay home. She even missed the Easter Party at her class, which she was pretty bummed about.  Spring break means a break from packing C's lunches this week, but does NOT mean no packed lunches for this Mommy. Packing my lunches is helping me lose weight, so I am not going to stop just because the cutesy lunches are on a week-long hiatus!  Bunny Lunch: Babybel cheese, marshmallow flowers, bunny-molded hardboiled egg, bunny food: crackers, carrots, green peppers and ranch I found the inspiration on Pinterest (surprised?) from Brandy of Gluesticks . She actually had an egg hunt with her kids. I just packed mine in a square Lock/Lock and used press and seal since I had bought jumbo eggs and didn't fit in a reused egg carton.
