eggplant omelet [tortang talong-meatless] {paleo}

Tortang talong (eggplant omelet) is usally made with sauteed ground pork. But I made this really quick version because I didn't have pork and I had my husband throw the eggplant on the grill while he grilled chicken sausages.   Mommy's Lunch: Eggplant Omelet,  quick tomato salad (EVOO, splash of vinegar, salt and pepper) pears Packed in an  EasyLunchBox Eggplant Omelet (Tortang Talong) -chinese eggplant (long and slender, not the fat ones) -1egg (more if using more than 1 eggplant) -salt & pepper (to taste) Grill or roast chinese eggplant (long and slender) until tender. Peel off the chard skin and mash the eggplant flat while keeping the stem. Beat the eggs, add salt and pepper. Heat coconut oil (or preferred frying oil). Last week of school!

Miss C's last week of school was 2 weeks ago... it was also her birthday week. (I will have the birthday stuff in the next post). She will be going to daycare during the summer, so I don't have to pack her lunches. Its only week 2 of summer break and I already miss packing her lunches. She misses school too. And since I'm not doing her lunches, I've been slacking in my own lunches. I have to come up with fun stuff this summer so this blog doesn't get stale. Go Giants!

The Super Bowl game is this weekend.   I don't follow football much. I'm more of a baseball fan.  (Is it Cubs season yet? Because maybe this is the year!) My hubby is a Bears fan... but... this weekend, we are rooting for the NY Giants. See, my husband's cousin's husband (cousin-in-law?) plays center for the Giants.  GO GIANTS! GO DAVID! Monday:  C's lunch: Homemade "Lunchables": ham, cheddar and Ritz crackers Watermelon, blueberries and fruit snacks My lunch: soup, watermelon/blueberries, mozz cheese stick Tuesday: C's day off My lunch: banana bread oatmeal, mozz cheese stick, and an apple Wednesdsay: C's lunch: Salad with turkey  rice crackers, strawberries, and blueberries    My lunch: Salad and blueberries Notice I don't waste the scraps when I cut out shapes for C's lunch. They either become part of my lunch, or more often, I eat for my breakfast. day 3: Sunbutter Jelly Sandwich

Due to severe nut allergies, the preschool has a nut-free policy. This means no PBJ's for Miss C.  Which was fine by me because I hate peanut butter and gag everytime I make peanut butter jelly sandwiches. When Miss C found out that she would be bringing her lunch, her first lunch request was PBJs. So off to the store I went to buy a $100 jar of Sunbutter. Okay, I'm exaggerating a bit. But for a $5 jar of Sunbutter, Miss C better eat her lunch!  Sunbutter is made from sunflower seeds, and it tastes a bit like peanut butter with a sunflower seed aftertaste. I'm not packing mine. I did not eat my previous lunch (chicken penne) at work, so I had that for that day. Plus, I hate peanut butter (did I mention that already?) or any kind of alternative nut/seed butter... Though I have yet to try Nutella... that one has chocolate, so I may like it. SBJ sandwich with carrot dots party mix, grapes, mozz. cheese SBJ Verdict:  Mixed. -- Miss C ate up the sandwich...
