turkey rollups w/Kale Chips

Miss C's Lunch: Turkey rollups with lettuce and cheese raspberries and blackberries snap peas w/ranch kale chips packed in a Planetbox Rover Kale Chips {recipe} 1 bunch kale (remove stems, wash and make sure they are dry) splash of olive oil sea salt  optional parmesan cheese (omit for paleo) optional seasoning: garlic powder, red pepper flakes, etc Preheat oven at 350deg. Toss kale with olive oil, and salt (and/or optional seasoning) Arrange kale in a single layer on a cookie sheet. (optional - sprinkle parmesan cheese) Bake for 20-25 minutes until crisp, turning halfway.

Ham and cheese roll ups  salad (mixed greens, mushrooms, and tomatoes) mini banana and cherries strawberry yogurt I think this Lunchbots Trio is one of my personal favorites. It is small and compact.  It doesn't look like a lot of food, it packs a lot especially when you stack and line up uniformly cut items. Some "compact" lunch ideas:  Cut up a sandwich in small squares and line them up.  Sliced crackers and cubed cheese.  Small berries or cut (melon, pineapple) fruit in uniform squares. Salad or crudites (small cut up veggies) "Lunchables" with meat/crackers/cheese Chicken salad & pita wedges. Sushi rolls

First day of Kindergarten!

No... I did not cry. It was an all smiles morning! Because of my super late post last night, I skipped my 5am workout in lieu of depositing towards my sleep debt. I set an alarm at 6:00 am. Miss C woke me up at 5:58 am. I asked her to go to her bedroom and change clothes. She came back to my room at 5:59 am. No lie. This girl usually takes 10 minutes to put on socks! Excited is an understatement. At 6:45 am, while I was still fighting with the camera settings since I have no natural light that early in the morning, putting lunch box inside her bag, she kept telling me to hurry because she might miss the bus (which was scheduled to arrive between 7:15/7:30). At 7:25, she stepped on that bus, sat down and waved at me through tinted windows. Despite the lump in my throat, I waved back. My baby is in Kindergarten. Seriously? 1st lunch of 2012-2013 school year! Miss C requested ham and cheese sandwich rollups,  carrots with ranch, blueberries, and a couple gummi wo...

Last week of school!

Miss C's last week of school was 2 weeks ago... it was also her birthday week. (I will have the birthday stuff in the next post). She will be going to daycare during the summer, so I don't have to pack her lunches. Its only week 2 of summer break and I already miss packing her lunches. She misses school too. And since I'm not doing her lunches, I've been slacking in my own lunches. I have to come up with fun stuff this summer so this blog doesn't get stale. I'm thinking about posting some recipes, summer themed lunches (zoo, beach/pool, Disney, etc) and prepping for the next school year (how to get started, my supply stash and where to buy, hints/tips. etc) Ladybug lunch: turkey sandwich, banana,  cheese stick, grapes & fruit snacks The "I-have-nothing-in-the-fridge" lunch: cucumbers, grapes, triscuits w/cheese and pepperoni, and lime jello Last day of school lunch: Sunbutter&jelly sandwich sushi Wheat Thins, cheese...

Busy May!

Nothing says quick and easy than a salad and a few animal picks on an EasyLunchBox with vanilla yogurt w/sprinkles and fruit cocktail Dinosaur sandwiches with flower watermelon and cucumbers  Teriyaki chicken and vegetables with rice strawberries, graham crackers and marsmallows "Just Cheese sandwiches cut into Just Squares" was Miss C's request for her lunch. strawberries, with a few marshmallows and yogurt... SPRINKLES MAKE THE WORLD GO ROUND!     Ham roll ups, cheese stick, grapes and pudding May is absolutely one of the craziest months for our family next to December! I had to prioritize all the preschool events, cakes, and birthday festivities, on top of our day-to-day activities, and blogging did not make it into the higher priority list. So in the next couple days, I'll try to catch up.
