Groundhog's Day Lunch

As with most of the midwest area, our weather this week has been crazy. It went from 60°F on Tuesday with rain, thunderstorms, hail, and flooding to snowing last night and high tempreture of 16°F and snow tomorrow. So I'm hoping for a cloudy day on Saturday in Pennsylvania, so Mr. Punxsutawney Phil Groundhog won't get scared of his shadow and we can have a shorter winter this year? Miss C and I are definitely looking forward to spring! Since Groundhog Day is on a Saturday, and Miss C planned to eat school lunch tomorrow,  we are celebrating GHD a couple days early. Happy Groundhog Day

In honor of Groundhog Day...  C's lunch: G-hog is a sloppy joe sandwich, crackers, carrots/ranch, and strawberry applesauce. (G-hog is a little beaver-ish. I had no idea how to turn a bun into a groundhog.  It's just something I whipped up in less than 15 minutes.) my lunch: similar sans applesauce with Babybel cheese.
